I’m now officially two weeks into my second Canberran winter, and I have to say… I don’t like it. I’m not a fan of watching TV in socks, slippers, a toque, a thick hoodie, all rolled up in a plush, fleece blanket with the heater blasting. I’m also not a fan of doing all this and still not being able to feel my nose or toes. It has been seriously cold.
I know what you’re all thinking. “She’s from Canada! Doesn’t it get, like, below forty degrees there?!” And you would be one hundred percent correct! If we were talking about the east coast of Canada. I’m from the west coast – the California Canada, if you will – where it never drops a degree below minus two, except on very special occasions. So yeah, this minus seven weather we’ve been experiencing in Canberra? That is cold to me.
But enough about the weather. You didn’t come here to listen to me complain about my frostbitten nose. You came for food! I’ve rounded up a few of my favourite winter time dishes from other extremely talented bloggers. The casserole is one of the best winter staples. They usually don’t involve a lot of prep work or clean up and the oven does most of the cooking for you. All bonuses in my books! Less work for me means I can focus on drinking tea and browsing Etsy for a nose-cozy. I hope these recipes keep you warm and feeling snuggly during this winter season and that you find a new blogger to read and enjoy!
5. One-Pan Spring Tuscan Quinoa Bake from Half Baked Harvest – Olives, peppers, tomatoes, and cheese! Oh my! Plus, I’m totally on board with any recipe claiming to be “one-pan.” This girl hates the dishes.
