Welcome! My name is Amanda and I’m so glad you stumbled across this blog. Pull up a chair, grab yourself a cookie and a mug of tea, and let’s get to know each other!
I’m the twenty-something baker, writer, and self-professed cinnamon addict behind this blog. I don’t have any official culinary or pastry training. Actually, I didn’t even enjoy cooking until about two years ago when I moved away from home and travelled around Australia and New Zealand. In order to survive, I had to learn to cook!
While cooking is more of a recent love, I have always had a passion for baking – be it sweet treats or savory goodies. Baking, for me, is a stress-reliever. Beating together butter and sugar, planning and decorating a cake, or even researching (read: watching a lot of Food Network and buying too many cookbooks) new methods of baking calms me down and gives me something pleasant to focus on. I found myself baking more and more during university as I was working to obtain my English literature degree, and even more while I was lonely in Australia. This stress, loneliness, and my love for baking and creative writing inspired me to create The Cinnamon Scrolls.
While baking and writing are my first loves, there are tons of other things I enjoy doing. These include, but are not limited to, reading, travelling, eating out with friends, drinking quality loose-leaf tea, binging TV shows on Netflix, snuggling with my dog, messing around with my camera, and browsing kitchen stores. I currently live in London, United Kingdom. I hope you stay a while!
The BlogI began The Cinnamon Scrolls in December 2014, about five months after I arrived in Australia. I started the blog as a way to connect with my friends and family back home and share with them my successes in the kitchen and my world travels. It quickly grew into something so much more. I had found something I loved to do. I loved sharing recipes and my life with people – not only with my family, but also with other food bloggers and readers around the globe.
This blog started as a mishmash of things that I cooked, loved, and wanted to share. That’s why you’ll find the odd entrée recipe (like French Cauliflower Soup and Greek Meatballs with Homemade Tzatziki & Mediterranean Couscous) as well as my New Zealand travel logs and my Australian restaurant reviews.
It wasn’t long after I returned to Canada that I realised my passion lies in baking. I love creating sweet and savoury treats that everyone can enjoy. But we don’t do just any sweets here.
All of the recipes you’ll find on The Cinnamon Scrolls are made using natural ingredients. I’m a huge advocate of healthy, wholesome eating. I don’t believe in regularly filling my body with highly refined/processed food or ingredients, because they only provide unwanted preservatives, additives, and synthetics. None of which is very good for you. I believe in butter, unrefined coconut oil, olive oil, raw cane sugar, honey, maple syrup, unbleached and wholemeal flour, pure vanilla extract, dark chocolate, and free-range eggs. Trust me when I say that you can still make and eat phenomenal baked goods without using refined ingredients, and I hope to show you how!
That being said, I also understand that eating unprocessed food at all times is impossible, especially when eating out (which I really enjoy). I have a weakness for M&Ms, red velvet cake, sour candies, and movie theatre popcorn. Moderation is key. I’ve adopted the 90% healthy and natural with 10% blow-it-all-out-the-window-and-enjoy-yourself diet, and I like to think The Cinnamon Scrolls also follows that premise.
