A quick life update before we dive into today’s post!
Last time we met, I mentioned that I hadn’t been posting regularly due to some pretty big life changes, and I promised an explanation that would make you all nod your head in understanding. So here it is…
I’m moving to the UK next week!
London, UK, to be specific! I’m so very excited about this new adventure and direction in life and I can’t wait to share it with all of you. Living in the UK has been a dream of mine for some time, and I’m so beyond happy that it’s finally coming true.
However, moving to a new country does come with its challenges. And it also takes a ton of time to plan and execute, which is why I’ve been devoting more of my time to moving rather than puttering around my kitchen. I hope you all understand! If any of you have ever moved to another country and have some tips to share, please leave a comment below. I have a list of tasks as long as my arm, but I’m sure I’ve forgotten things.
I wanted to assure you, dear friends, that this blog will continue just as it has through my move back to Canada. I do need a little time to get myself sorted and set in my new country, but I didn’t want to leave you hanging all month! A few of my blogger friends have been wonderful enough to dream up some delicious summery recipes for you guys for August, and I couldn’t be more overjoyed to bring them aboard.
Please give Samantha from My Kitchen Love a warm welcome today as she shares her gorgeous and refreshing Watermelon Lime Granita recipe! Sam is one amazing gal who somehow finds the time to create beautiful, tantalizing recipes twice a week while also corralling three little ones under three! The phrase “I don’t know how she does it” was created for this wonder woman. Thank you again, Sam!
Hi Cinnamon Scrolls readers! I’m Samantha and I blog over at My Kitchen Love. I blog about recipes that my family and I devour on the regular. I’m a mom of three very young ladies (all under three years old) and most, if not all of my recipes, are family-friendly and get two thumbs up from my kids and my hungry hubby. I’m very excited to be sharing a recipe with you all. Big thanks to Amanda for asking me on board for a summer guest post. And what a summer recipe it is! Watermelon Lime Granita is an easy dish anyone will love. Chop some fruit, blend, and freeze for the ultimate cold treat.
This is a feel good treat; there’s no sugar besides the good old natural stuff found in fruit. If you or your family love life on the sweeter side, you can add 1-2 teaspoons of agave syrup or honey, but my family and I love the way the tart aspect of the lime shines through the watermelon in this recipe.
With this recipe I’d highly recommend splurging and buying seedless watermelon. Otherwise, way too much of summer is going to be spent removing the seeds from watermelon so the granita isn’t too bitter.
I have to confess that I enjoyed this recipe, but became obsessed with it when I topped a few scoops with an ounce of gin (for myself and not the children obviously). It would probably work with most spirits such as vodka or rum, but I love watermelon, lime, and gin together. The flavours are refreshing and ideal for a hot summer’s evening when I enjoyed a cocktail with my husband as the kids were playing in the yard.
I hope you’re enjoying your sweet summer!
- 4 cups roughly chopped seedless watermelon
- juice and zest from 1 lime (zest first and set aside)
- 1-2 tsp agave syrup, optional
- Place chopped watermelon and lime juice in blender and process until completely smooth.
- Place in a freezer-proof container (baking tins work well), sprinkle with lime zest and freeze.
- Scrape the top of the mixture with a fork every 30-60 minutes for 2-3 hours until desired consistency is reached.
